barre scoff!
Over the (nearly) 4 years that I’ve been running Barre Sculpt, I have heard the same question time and time again - “what do you eat?” I think clients often assume I’m going to say that I’m a vegan or gluten free or on a strict diet, however I eat pretty much everything. I am passionate about food though, particularly about two things -
1.Cooking from scratch every day
(I say every day, I mean Monday-Thursday, I outright refuse to cook at weekends, this privilege falls to the hubby or the takeaway man!) Time is of course an issue with this mindset however, and sometimes I just don’t have the time, I have a freezer full of ready meals for those days when it just doesn’t happen, but I feel that as long as we’re getting freshly prepared food more than we’re not then I’m on the right track! I’ve certainly found it easier since the hubby has been working from home and tends to be able to watch the boys for me whilst I cook (it’s not at all as easy trying to stop a baby from drinking out of the dog bowl at the same time as chefing!) and it’s become my bit of ‘me time’ where i whack on Spotify and have a boogie round the kitchen.
2.Eating as a family and the children eating the same as us
From the age of 5 months old my boys have always eaten the same as us. I’ve never done purees or cooked separate meals, just chopped it up smaller! I would say that a massive part of this is laziness, how people find the time to cook two or three different meals each evening is beyond me, but also because I want them to be as passionate about food as I am and want to sit down and eat together as frequently as possible. Again this has become far more achievable since the hubby has been working at home. Back when he was commuting to London it was impossible, but I still cooked one meal, fed it to the boys and then heated it up to feed him and I later when he was home. I also think I’ve been very lucky with two boys who eat everything and anything. I’m sure if I had a child who studied each mouthful I would have changed tack by now, but luckily they both inhale anything put in front of them, I just leave out chilli and salt from all cooking.
I must absolutely stress that I AM NOT A NUTRITIONIST OR A CHEF!!! I am just a mummy cooking child and grown up friendly meals that are both balanced and easy.
All recipes serve two adults and two children, often with left overs for lunch the next day and almost all of them are made in JUST ONE POT IN 5 STEPS! Enjoy!
More pots than I’d like and more steps too, but it’s a really good way of putting together loads of different veggies and is VERY filling!
The only thing that takes time is the slicing. Once that’s done it’s in the oven and you’re out of the kitchen! Full of goodness and only 3 steps.
I cooked this between Christmas and New year when I felt we needed a big dose of healthy non stodge! Just 4 steps.
