Cheesy Veggie Bake
INGREDIENTS
-1 tin of chopped tomatoes
- 1tsp paprika
- 1tsp ground cumin
- 1 sweet potato, sliced (very thinly otherwise it won’t cook)
- A 4 pack of cooked beetroot, sliced
- A jar of sun dried tomatoes
- 2 courgettes, sliced
- 2 packs of mozzarella, sliced
- parmesan
METHOD
Heat the tomatoes and add the spices
Layer up the veggies in an oven dish topping each layer with mozzarella and the tomato sauce. You should have enough for 2 layers. Top the final layer with parmesan.
Cook in the oven at 180 degrees for 45 minutes.
Serve with salad
